Ranch-house Chicken & Potatoes

This dish is so easy and SOO yummy!! One or our definite favorites. :)

Everything you'll need:


*Update:  I should specify that the chicken should be boneless, & skinless. :)

Bryan's favorite Casserole

Do this in a 9" X 13" inch pan.  The pictures show an 8" X 8" pan, because my 9 x 13 pan was dirty. lol

You will need:

Cheese Grater
9 x 13" pan
1 pkg. Tater Tots
1 lb. Ground beef
2 C. Cheddar Cheese (u can add more or use less....i use sharp cheddar)
1 C. Sour Cream
1 Can cream of Mushroom soup (i used cream of chicken).


 in your 9 x 13" pan, put ONE layer of frozen tater tots on bottom of pan. Do not pile them up in about 2 layers like I did.

Put in oven at 400 degrees for 15- 20 min. 

Brown your ground beef and drain it.  Then add the ground beef on top of frozen tater tots


In a separate bowl, mix entire can of soup with sour cream.



Mix them together well.



Now add the soup and sour cream mixture to the top.



Add your cheese.....



Put it in the oven until heated through... nice and bubbly!  350 degrees for about 15-20 min.  Leave in longer if needed.

Grandma Clayton's Bean and Cheese Burrito

Pour on whatever toppings you would like (sour cream, salsa, hot sauce, taco sauce...)  and enjoy!!! :)


But just don't end up looking like this when you are done. :)  Hehe.

Pasty!

Pasty

PREHEAT OVEN To 325 degrees

What you will need:
2-3 meduim Potatoes
A Bag of baby carrots (I cut up about 20)
1 Stick of butter
1 medium Onion
1 pound of Ground Beef
1 Box of "unroll and bake" Pie crust
Aluminum Foil
Pie Plate/ Tin
Cutting Board
Knife


Make sure your oven is preheating to 300 degrees


 Cut up the carrots. Cut in half length-wise and then in half.

Put in a bowl

Get the golden potatoes so you don't have to peel them
Cut in half and then in half again length-wise.  Then slice into pieces.  Don't cut them too thick or they may not bake all the way through.
Add them to the carrots.
Tear off pieces of your raw ground beef and add them to the bowl also.  The pieces should be about the size of the potato chunks.


Cut off both ends of the onion and take off the outer few layers. Slice them into circles and set aside.

Take out the two rolls of pie crust.open up one and roll it out carefully in the bottom of the pie plate.
Press all the edges down into the plate so the dough covers the whole plate.

Dump the veggies and meat into the pie crust.

Add the slices of onion to the top.


Slice the butter and put about 2-4 dabs on top of the meat and veggies.
(EDITED: 2 dabs is PLENTY!)

Roll the second Pie crust on top of the mixture.

Press down and pinch the two crusts together onto the pie plate.
Cute 3-4 slits into the top of the crust.
Put tin foil around the edges (Shiny side out).

Place in your preheated oven and bake 2-2.5 hours
